‘Peritia Tempore’ means knowledge gained over time. We bottled the first Peritia in 2024, ten years after we became vineyard owners in the Barossa Valley. It reflects what every vintage has taught us about adapting and persevering, season after season. We picked the Shiraz on 17 March 2022 and fermented it on skins for 7 days. We set aside three barrels (new French, second-fill American and seasoned American) to develop deeper, richer flavours. The wine stayed in oak for about 30 months, with no fining or filtration, before it was bottled in November 2024 and released in May 2025.
